The Best Turkey Pot Pie


Turkey Pot Pie..... is there anything else better? This comfort food recipe wins over my family every time. These pies are a standard after Thanksgiving and Christmas in our household. We are a family of 3 and often have TONS of turkey leftovers after these holidays. Why I love this recipe over the others is because it holds strong. When you cut this pie, the insides do not seep out, but rather stick together. It also freezes great. I make 4-5 pies at a time and freeze (recipe is for 1 pie only so double to triple as needed). Busy night like tonight I bring it out for a quick oven meal my family is sure to love and I promise yours will too.

Prep Time: 20 minutes Cook Time: 50 minutes Total Time: 1 hour 10 minutes

Ingredients: - 9" pie shell x2 (I use already made frozen pie shell) - Olive Oil (2 TBSP) - Onion (1 large, diced) - Carrots (2 medium, sliced) - Green Peas (frozen, 1 cup) - Celery (2 medium, sliced) - Garlic (4 large cloves, minced) - Corn (1/4 cup frozen) - Italian Seasoning (1 TBSP) - Dried Parslsey (1/2 TBSP)

- Dried Thyme (1/2 Tsp) - Salt & Pepper to taste

- Chicken Broth (1 3/4 cups)

- Milk (2/3 cup) - Flour (1/3 cup)

- Butter (1/3 cup) - Turkey (approx. 2 cups chopped)

Instructions:

Preheat oven to 425F degrees. Saute Onions, carrots, peas, corn, and celery in the olive oil until soft. Add the turkey and set aside. In a separate pan add all seasonings and flour to the mix and stir for about a minute or until fragrant. SLOWLY, stir in chicken broth and milk. Simmer over medium heat until thick. Combine both together and pour into pie shell. Cover with top crust, seal edges, and make small slits on the top shell to allow steam to be released

Bake at 425F degrees for 50 minutes. Cool for 10 minutes before serving. NOTES:- You can swap chicken instead of Turkey. - Got left over mashed potatoes? Stretch your pie shells even further by topping with mashed potatoes instead of a shell.
