Easy Cheesy Tomato Chicken Bake


This chicken bake is like no other. EASY 40 minute meal full of flavorful, and healthy to boot. With very few ingredients, this recipe is easy to whip up in a pinch. A real crowd pleasure with my family and I hope it is with yours as well.

Prep Time: 5 Minutes

Cook Time: 35 Minutes

Total Time: 40 Minutes

Bake: 425 degrees Fahrenheit

Ingredients: - Chicken Breasts, 6 (alternatively you can do 8-10 chicken thighs) - Diced Tomatoes (1 can) - Italian Seasoning (1 TBSP)

- Dried Parsley (1/2 TBSP)

- Salt and Pepper (to taste) - Onion (Small, diced) - Garlic (3 cloves, finely chopped) - Marble Cheese (1/2 cup)

- Parmesan Cheese (1/4 cup) Instructions: 1. Turn oven on to 425 degrees Fahrenheit 2. Grab a 9" baking dish, add all ingredients except chicken or both cheeses. Stir to blend. 3. Salt and pepper both sides of each chicken and add to the baking dish. Push chicken down into the tomato mixture to make sure it simmers in deep while cooking to absorb the flavors. 4. Bake for 30 minutes at 425 degrees Fahrenheit. Next, top the dish with both cheeses and return to the oven. Bake for an additional 5 minutes or until cheese is melted.
