Buffalo Shrimp Quinoa


I love seafood. ANY seafood. My husband, not so much. Actually he can't eat a lot of the stuff because he is allergic to Shell Fish and avoids all of it at all costs. So when he travels for work, you better believe that I consume all the seafood I can get my hands on. Here is a QUICK and HEALTHY Buffalo Shrimp Quinoa recipe that I promise will become a staple in your dinner routine. Prep Time: 5 minutes

Cook Time: 40 Minutes

Total Time: 45 Minutes

Ingredients: - Quinoa (1 cup dried) - Shrimp (1 lb de-shelled) - Celery (2 stalked, chopped) - Onions (1 large, diced) - Olive Oil (3 Tbsp) - Asparagus (7 stalks) - Cabbage (1 cup, chopped) - Garlic (4 cloves, minced) - Italian Seasoning (1/2 Tbsp) - Red Pepper (1 pepper, chopped) - Buffalo Sauce (1/2 cup) Instructions: 1. Cook 1 cups of quinoa as per instructions. 2. Add oil and all vegetables to a large frying pan and saute until cooked. 3. Add garlic, Italian seasoning, buffalo sauce and cook until fragrant (about a minute) 3. Add uncooked shrimp and quinoa to the frying pan and cook until shrimp is bright pink. Bon Appetite.
