Bacon Mustard Chicken

Cook Time: 30 Minutes

Total Time 35 Minutes Serves 4-6

Ingredients: - Chicken (thighs 6-8) - Onions (1 medium, diced) - Bacon (6 slices, cut into 1") - Olive Oil (3 Tbsp) - Garlic (4 cloves, minced) - Chicken Broth (1 cup) - Salt and Pepper (To taste) - Italian Seasoning (1 Tbsp) - Salt and Pepper (To Taste) Wet Rub:

- Mustard (1/4 cup)

- Paprika (2 Tbsp)

- Italian Seasoning (1 Tbsp)

- Salt and Pepper (To Taste)

Directions: 1. Make wet rub. Add all ingredients to a small bowl. Using hands or a small spoon, coat the chicken (I prefer to let marinade for 30 minutes but not needed). Set aside. 2. In a large frying pan, add olive oil, onions, and bacon. Fry until bacon starts to crisp and the onions are tender. Spread mixture to the edges of the pan, making a hollow ring. Add the olive oil and chicken to the center of the pan. Cook for 10 minutes, the flip and cook the other side for another 10 minutes. Remove and set aside again. 3. Add garlic, Italian seasoning, salt and pepper and cook for one minute and becomes fragrant. Add the chicken broth and bring to a boil. Take the chicken that is set aside and add back to the pan. Simmer each side for another 5 minutes, each side. 4. Serve over your favorite rice Bon Appetite
