Cook Time: 1 hour Serves: 4-6 .

Ingredients: - Onions (1 large sweet, 1 large Spanish, sliced thickly) - Butter

- Wine (1/2 cup)

- Beef Broth (4 cups) - Garlic (3 cloves, minced) - Thyme (1 Tsp) - Bay Leaf (1) - Salt and Pepper (to taste) - Parmesan Cheese (3 Tbsp) - Gruyere Cheese (In a pinch you can use swiss, 1 cup) - Bread crumbs (1 cup) . Directions: 1. In a large frying pan on medium heat, add the butter and sliced onions. You want to thickly slice these onions as they shrivel up to about half its original size. You are going to caramelize these onions slow and steady till they are a beautiful golden brown. You also want to make sure it on medium to low heat and not to burn. This will take approximately 45 minutes. 2. Once golden brown, add the garlic, thyme, bay leaf, and salt and pepper. Cook until fragrant. Add the wine and simmer for a few minutes to draw the alcohol out. Add the beef broth and cook for another 10 minutes to let all the ingredients come together. 3. Preheat oven to 425 degrees. In french onion soup bowls or oven safe bowls, add the soup mixture, then bread crumbs, then cheese of choice. Bake for 15 minutes or until cheese is bubbly and slightly golden brown. .
