Cheesy Fiesta Potatoes

In high school my friends and I would go to Taco Bell every lunch hour. I'd order their Cheesy Fiesta Potatoes every darn day. It was a sad day when I they no longer served them. I've clearly been dreaming of these potatoes from my past for quite some time and needed to create a copy cat recipe, and BOOM are they ever tasty. Prep Time: 5 minutes Cook Time: 30 minutes Total Time: 35 minutes Serves: 4 Ingredients: - Potatoes (4 medium, peeled, cubed) - Butter (3 Tbsp) - Cumin (1/2 Tbsp) - Garlic Powder (1 Tbsp) - Parsley Flakes (to garnish)

- Tostitos Con Queso (1/2 cup) - Sour Cream (1/2 cup) Directions: 1. Preheat oven to 400 degrees. Peel potatoes and then cube them (about 3/4"). With a large lip lock bag, add potatoes, cumin, and garlic powder. Toss to coat evenly. In a large frying pan, on medium high heat, melt butter. Once melted and hot, add potatoes and spread evenly. Let them fry in the butter for about 10 minutes. Flip them once, and crisp on the other side and cook for another 10 minutes. 2. On a large baking sheet, dump potatoes, and cook for another 10 minutes to ensured fully cooked. In a bowl, add a large scoop of potatoes, a large dollop of con quesco and a large dollop of sour cream. Garnish with parsley. Repeat for however many servings you need.
