Prep Time: 20 Minutes Cook Time: 20 Minutes Total Time: 40 Minutes Serves: 3-4 Ingredients: - Stuffed Peppers (3-4 medium) - Ground Beef (lean, 1 lb) - Onion (medium cooking, diced) - XB3 Season (or substitute Cajun Seasoning) - Diced Tomatoes (1 can, drained) - Rice (Instant 3/4 cup) - Chicken Bouillon - Marble Cheese (1/2 cup, shredded) - Parsley (to garnish) Directions: 1. Preheat oven to 425 degrees. In a large frying pan, add ground beef and onion. Once separated add seasonings and cook until fragrant. In a medium pot, add water and chicken bouillon and cook rice as directed on the box. Once cooked add diced tomatoes and rice to the ground beef mixture and set aside. 2. De-core the peppers with a spoon. Note when selecting the peppers look for ones that easily stand on their own. Add a little bit of water to the bottom on your baking sheet. This prevents the peppers from burning and helps soften the peppers. 3. Scoop the meat mixture into the peppers. Fill to the top. Top peppers by sprinkling shredded cheese and parsley. Cook for 20 minutes. Serve immediately.
