What better way to end the Valentine escapades then with some Bang Bang Chicken. This crispy chicken smothered in sauce has a kick that will have you coming back for more. At least my husband did. Whats even better, it only takes 35 minutes to make.

Total Time: 35 Minutes Serves: 4-6
Ingredients:
- Chicken (Thighs or breasts, 5-6, chopped) - Panko Breadcrumbs (1 cup) - Garlic Powder (1/2 Tbsp) - Onion Salt (1/2 Tbsp) - Sugar (1 Tbsp)
- Sriracha Sauce (1 Tbsp)
- Rice Wine Vinegar (1 Tbsp)
- Mayo (1/2 cup)
- Flour (1/2 cup)
- Pepper (to taste)
- Salt (to taste)
- Eggs (2, slightly beaten)
Directions: 1. Preheat Oven to 425 degrees. Chop up chicken into 1" cubes. Using 3 small bowls, add flour to one, eggs, salt/pepper to another, and panko breadcrumbs, garlic powder and onion salt to the last one. Setting a small baking dish aside, coat each piece of chicken first in the flour, then egg mixture, then panko breadcrumb mixture and set into baking dish. Once each piece of chicken is coated bake for 25 minutes. 2. While the chicken is cooking, in a small bowl, add mayo, sugar, sriracha sauce, and rice wine vinegar. Mix thoroughly and set aside. This is the sauce to coat the chicken after baked. 3. Once chicken is done, pour the bang bang sauce over the chicken and toss lightly. Serve immediately. Bon Appetite
