Cheesy Chicken Bacon Casserole

Casseroles are comfort food at its best. Someone passed away? Your sick? Stubbed your toe? Here is a casserole. Through every tough time, there is a casserole for that. True Story. Here is an addictive creamy, cheesy, chicken, bacon'y casserole sure to save someones life.

Chicken Bacon Casserole

Prep Time: 30 Minutes Cook Time: 30 Minutes

Total Time: 1 Hour

Serves 5-7

Ingredients:

Pasta (fusilli, 4 cups dry)

Bacon (4 slices, cooked and chopped)

Onion (1 medium, diced) Red Pepper (1 medium, diced)

Chicken (breasts 2 or thighs 5-6, cubed)

Butter (1/4 cup) Flour (1/3 cup)

Garlic (3 cloves, minced)

Garlic & Herb Seasoning (1 Tbsp) (Substitute Italian Seasoning if you don't have)

Milk (2 cups)

Cheese (marble, 1 cup shredded, divided) Salt and Pepper (to taste)

Directions:

1. In a medium frying pan, cook bacon. Once cooked, set aside and save bacon grease. Saute onions and red pepper for a few minutes on medium high heat. Then add chicken. Cook all together until chicken is cooked and vegetables are soft. Approximately 15 minutes.

2. Preheat oven to 425 degrees. Cook Pasta as directed on package. Remove cooked chicken and vegetables and set aside. In the same frying pan, on medium low heat, add butter, flour, garlic and seasonings to make a roux. Once roux is mixed together, SLOWLY add the milk (1/2 cup at a time). Once all the milk is added, add 1/3 cup cheese. Mix thoroughly.

3. In a large casserole dish add the pasta, sauce, chicken and vegetables. Mix thoroughly. Top with the remainder of cheese and chopped bacon. Bake for 30 Minutes.
