Welcome to luxury with this grilled coq au vin recipe. Made with a creamy mushroom/shallot/garlic sauce with a surprise splash of PROSECCO. Fall off the bone chicken, with reduced sparkling champagne - gives this Coq Au Vin Made with Prosecco a thick, sweet and savoury taste your guest will adore.


Why grilled coq au vin? It's easy but yet fancy. By infusing the chicken with smoke first, getting those charred grill marks, then adding it to a creamy mushroom garlic sauce - bone drop delicious. When the chicken braises and reduce in the sauce it falls off the bone, tender, and so juicy.


WHAT IS COQ AU VIN?

A French cuisine dish made up of chicken braised in a traditional lardon (bacon or pancetta) wine and mushrooms reduced sauce. Traditionally red wine is used but progressively have seen recipes with wine and champagne. Different variations but all have these rooted ingredients. PREP TIME: 15 Minutes

GRILL TIME: 1 Hour 15 Minutes (Approximately)

GRILL TEMP: 350 Degrees

INTERNAL TEMP: 165-180 Degrees

INGREDIENTS

Chicken (Bone-In Chicken Drumsticks or Thighs (6-8 pieces)

Bacon (6 slices, cut 1" pieces)

Prosecco (2 cups, dry sparkling champagne)

Mushrooms (2 cups, sliced)

Garlic (4 cloves, minced)

Shallots (2 small, sliced)

Parmesan Cheese (2 Tbsp)

Salt (1 tsp)

Pepper (1 tsp)

Parsley (1 Tbsp, roughly chopped)

Potatoes (1 1/2 cups, cubed)

Poultry Rub

THE PREP (15 Minutes)

Coq Au Vin made with Prosecco is simple to prepare. First, preheat your pellet grill to 350 degrees. Next prepare the chicken for your grilled coq au vin recipe. Evenly coat all sides of the chicken with your favourite poultry rub. I used, "Black Truffle" by Louisiana Grills. Put your chicken directly on the grill to get a smoke bath while you get the other ingredients ready.


For this grilled coq au vin recipe, we are using my favourite bubbly - prosecco. Next prepare all the ingredients to saute in your dutch oven. Slice your bacon, cut all your veggies, and measure out everything else. I like to have all my ingredients ready on hand when doing cast iron cooks on the pellet grill.

THE COOK (1 Hour)

First Add your bacon and saute for 5 minutes. Next add your shallots, mushrooms, and potatoes. Saute until your mushrooms are slightly wilted. Next add your garlic, salt, pepper and parsley. Saute for a few minutes, ensuring not to burn the garlic. The final stage of this grilled Coq Au Vin recipe is adding in your prosecco and parmesan cheese. Stir thoroughly and then sit your grilled chicken into the sauce. Cover your dutch oven and braise/reduce for an hour or until your chicken is 175 degrees or over (fall off the bone).


You will have a lovely braised reduced sauce so spread over some delicious pasta or rice as a lovely side dish. This is such a savoury dish your whole family will enjoy it.
