WHICH CUT OF STEAK DO YOU USE FOR A HEART STEAK?

RIBEYE: In order to cut a heart steak you'll need a 2 1/2" - 3" thick ribeye steak. You will need a very sharp knife, and a steady hand, you can cut a heart steak with ease. A ribeye steak has a naturally rounded top that, when split open, looks like a heart steak. The fat ribbons within the steak itself resemble a heart as well, which only adds to the look of the heart steak.

HOW TO CUT A STEAK INTO A HEART

1. Make sure your ribeye steak is completely defrosted.

2. Sharpen your knife. You want precision cuts for a beautiful heart steak.

3. Identify the top rounded part of the ribeye. Envision it split open and choose which side you want to cut open. You will not be cutting all the way through.

4. Cut in the middle of the steak until you have about 1/2" left. Split it open and you should start to see a heart shape take effect. I cut the very top of the ribeye more to split it completely open. Creating the two bumps of the heart. At the bottom I trimmed it slightly, just to look more like a perfect point.

HEART SHAPED STEAK RECIPE

Here is the step-by-step tutorial on how to cut a heart shaped steak. This recipe is foolproof, easy, and won't take up all your time on Valentine's Day. Here is how I did it,

1. DRY BRINE: Sea Salt on all sides of this heart shape. Placed on a wired rack and into my refrigerator for 24 hours.

2. SMOKE: Preheat your pellet grill to 225 degrees. You want to smoke for approximately an hour or until an internal temperature of 120 degrees. Remove from the grill, open the sear plate, and turn the temperature up to 500 degrees.

3. SEAR: Sear your heart steak on both sides for a couple of minutes to get a nice sear.

4. REST: Rest for 5-10 minutes before slicing in.

5. SERVE: Your steak is sort of flipped inside out. Make sure you identify which way the grain is running and cut against the grain.
