Sloppy Joe Stuffed Peppers | Smoked Stuffed Pepper Recipe


Two things my family loves are sweet stuffed peppers and sloppy joes. I decided to combine the two favourites with this Sloppy Joe Stuffed Peppers into one epic meal they just devoured. This homemade sloppy joe is so delicious I could literally drink it. Stick around as I show you this smoked stuffed pepper recipe you will surely enjoy.


I love sloppy joes, they are fun and messy to eat. The kids love it as it's a sweeter version of spaghetti sauce, with all the bells (peppers) and whistles. I also used this recipe in a fun Sloppy Joe Tater Tat Casserole - CLICK HERE FOR RECIPE.


We decided to smoke this smoked stuffed pepper recipe as it just adds another layer of goodness to it. I used my Louisiana Grills Founders Premier, but you can also do this at the same temperatures in your oven.


WHAT YOU'LL NEED

PAN or CAST IRON SKILLET (I used my Pitboss Grills cast iron)

PELLETS (I used Louisiana Grills Cherry for this cook)

INGREDIENTS

- Bell Peppers (6- 8 Peppers)

- Minute Rice (1/2 cup, cooked as instructed)

- Lean Ground Beef (1 1/2 lbs)

- Onion (1 medium, diced)

- Marble Cheese (1/2 cups, shredded)

- Water (1/2 cup)


THE SAUCE

- Cream Cheese (4 Tbsp)

- Pepper (to taste)

- Onion Powder (1 tsp)

- Paprika (1/4 tsp)

- Garlic (4 cloves, minced)

- Worcestershire sauce (2 Tbsp)

- Mustard (1 Tbsp)

- Brown Sugar (1/4 cup)

- Tomato Sauce (1 can)

- Corn (frozen 1/4 cup)

DIRECTIONS

First for this sloppy joe stuffed peppers recipe, preheat your pellet grill to 400 degrees. Let your cast iron dish warm up with the grill. Then add your onion and ground beef and saute until your beef is browned and your onions are translucent.


Next, add all your sauce ingredients, mix thoroughly and let simmer for 7-10 minutes. Now it's time to add your prepared rice. Remove from the grill, but keep your grill on. You want to cut the tops of bell peppers off and remove the core and any seeds with a spoon. Pro Tip: get the 4 bump bottom stuffed peppers as they balance better standing up. Stuff the sloppy joe mixture into your stuffed peppers. You can top your stuffed bell peppers with marble cheese if you like.


Using the same cast iron, add 1/2 cup of water and place the sloppy joe stuffed peppers back into the pan. Smoke for 20-30 minutes, or until your peppers become somewhat soft. Enjoy.
