Tomato Basil Soup | an Easy Tomato Soup Recipe

What to do with all your fresh tomatoes this time of year? make Tomato Basil Soup of course. Having tomato recipes at hand when tomato season has arrived takes all the stress out of it. My favorite thing to do, on a summers fall day is smoke some fresh tomatoes and make an easy tomato soup recipe. With only 60 calories per cup, it's worth all the effort.

Easy Tomato Basil Soup

Fresh tomatoes kissed with smoke from my Louisiana Grills Black Label 1200, gives it such an in depth flavor to this soup. I used Pitmasters Choice Premium Pellets, fruit blend (Scaleandtailor10 for 10% off at checkout) for that extra sweet touch. Making this easy tomato soup recipe from scratch is extra special. All ingredients dug up from my veggie garden; basil, onions, and tomatoes. This is what I do with all my fresh tomatoes.


Prep Time: 10 Minutes

Smoke Time: 40 Minutes Cook Time: 30 Minutes Total Time: 1 Hour 30 Minutes

Serves: 6

Ingredients: Tomatoes (Roma 12-15 or Beefsteak 8)

Chicken Broth (4 cups) Water (2 cups)

Tomatoes (1 canned, diced)

Onions (Cooking, 3 medium, diced) Red Pepper Flakes (1 tsp)

Butter (1/4 cup)

Olive Oil (1/4 cup)

Garlic (5 cloves, minced) Italian Seasoning (1 Tbsp)

Parsley (Fresh, 1 Tbsp, finely chopped) Basil (Fresh, 3 cups)

Salt (1/2 Tbsp) Pepper (1 Tsp)

Directions:

While the tomatoes are smoking/baking. Grab a large pot and add the butter and onions and cook on medium heat. Once your onions are translucent add the garlic, Italian seasoning, parsley, basil and red pepper flakes. Cook for about a minute or fragrant. Add diced tomatoes, water, and chicken broth. Once tomatoes are cooked, pour the tomatoes and liquid into the pot as well. Simmer for 30 minutes for the soup to infuse. Let soup cool just a little so blending isn't so dangerous (yes, we had an accident with the blender before). Either use an immersion blender, or blender, and blend the soup to your desired consistency. You can serve right away, or simmer. I always say, the longer you simmer a soup, the better it tastes.
